Raw//Vegan Matcha Bars

Ingredients

CRUST

  • 1 cup almonds
  • 1 cup prunes
  • 1 TBS agave nectar

 

FILLING

  • 1 1/2 cups cashews (soaked overnight)
  • 1/2 cup coconut oil
  • 1/2 cup coconut cream
  • 1/2 cup agave nectar
  • 2 TBS matcha powder

Instructions

  1. Soak cashews in water overnight or for at least 6 hours.
  2. For the crust- process the prunes in food processor until small pieces are formed.
  3. Add the almonds and agave nector until crumbly dough forms.
  4. Line a 8x8 square dish with parchment paper.
  5. Transfer the crust mixture to the bottom of dish and spread evenly.
  6. Place in the refrigerator until the filling is ready.
  7. In a blender or food processor add soaked cashews, cocount oil, coconut cream, agave nectar and matcha powder.
  8. Blend until smooth and creamy.
  9. Pour the batter over the crust and place in freezer for at least 4 hours before serving.
  10. When ready, let thaw for about 10-15 minutes and cut into squares.
  11. Enjoy and keep frozen for up to 4 weeks!
