/Raw//Vegan Matcha Bars
Ingredients
CRUST
- 1 cup almonds
- 1 cup prunes
- 1 TBS agave nectar

FILLING
- 1 1/2 cups cashews (soaked overnight)
- 1/2 cup coconut oil
- 1/2 cup coconut cream
- 1/2 cup agave nectar
- 2 TBS matcha powder
Instructions
- Soak cashews in water overnight or for at least 6 hours.
- For the crust- process the prunes in food processor until small pieces are formed.
- Add the almonds and agave nector until crumbly dough forms.
- Line a 8x8 square dish with parchment paper.
- Transfer the crust mixture to the bottom of dish and spread evenly.
- Place in the refrigerator until the filling is ready.
- In a blender or food processor add soaked cashews, cocount oil, coconut cream, agave nectar and matcha powder.
- Blend until smooth and creamy.
- Pour the batter over the crust and place in freezer for at least 4 hours before serving.
- When ready, let thaw for about 10-15 minutes and cut into squares.
- Enjoy and keep frozen for up to 4 weeks!
